Bunnies are hopping around and the birds are singing. Flowers are sprouting and the smells of spring are in the air.
As nature blooms around us, I spent some time reformulating my Tempting Thai soup that is truly springing with flavor.
Trying to replicate the zesty freshness of traditional Thai ginger coconut soup with dry ingredients is no small feat.
I'm quite proud of this soup featuring kaffir lime leaves, lemongrass, lemon, ginger and other seasoning. I look forward to your feedback!
I recently made a delightful, but time consuming, salad with fresh greens, baked tofu, browned red onions, roasted red peppers, basil, radish and seeds, topped with a homemade flax oil honey mustard dressing.
My soups are meant to help out when you don't have this much preparation time, yet want to eat well and have it taste good too!
From our kitchen and family to yours,
may you enjoy the change in seasons!
